Ingrédients
- 2 cans chickpeas, drained and rinsed
- 3 tablespoons vegan mayonnaise
- 1 tablespoon Dijon mustard
- 1 tablespoon lemon juice
- 1/2 cup celery, finely chopped
- 1/4 cup red onion, finely chopped
- 1/3 cup pickles, finely chopped
- 1 tablespoon fresh dill, chopped
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 8 whole wheat slider buns
- 1 cup lettuce leaves
- 1 large tomato, sliced
Instructions
- In a large mixing bowl, mash the chickpeas with a fork until chunky but not pasty.
- Add vegan mayonnaise, Dijon mustard, and lemon juice to the chickpeas. Stir until well combined.
- Mix in the chopped celery, red onion, pickles, and fresh dill.
- Season the salad with salt and black pepper, adjusting to taste.
- Refrigerate the chickpea salad for at least 30 minutes to allow the flavors to meld.
- To assemble the sliders, place a generous scoop of chickpea salad onto the bottom half of each whole wheat bun.
- Add a slice of tomato and a lettuce leaf on top of the salad.
- Cover with the top half of the bun and serve immediately.
