Spicy Thai Papaya Salad - Low Calorie

Ingrédients
- 2 cups shredded green papaya
- 1/2 cup shredded carrot
- 4 cherry cherry tomatoes, halved
- 6 green green beans, cut into 1-inch pieces
- 2 tablespoons fish sauce
- 1 tablespoon lime juice
- 1 tablespoon tamarind juice
- 2 cloves garlic, minced
- 2 bird's bird's eye chilies, finely chopped
- 1 tablespoon palm sugar
- 2 tablespoons roasted peanuts, crushed
- 1 tablespoon dried shrimp
- 1/4 cup fresh cilantro leaves
Instructions
- In a large mortar and pestle, combine the garlic, chilies, and palm sugar. Pound until smooth.
- Add the green beans and dried shrimp, and gently pound until mixed.
- Add the fish sauce, lime juice, and tamarind juice. Mix well.
- Add the shredded papaya and carrot, gently pound and mix to coat the vegetables with the dressing.
- Stir in the cherry tomatoes and crushed peanuts.
- Transfer to a serving plate and garnish with fresh cilantro leaves.
- Serve immediately as a refreshing and spicy appetizer or side dish.
