Ingrédients
- 2 cups wild rice, cooked
- 1 tablespoon olive oil
- 1 large onion, diced
- 3 cloves garlic, minced
- 1 pound mushrooms, sliced
- 4 cups vegetable broth
- 1 cup heavy cream
- 1 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 cups baby spinach
- 1/4 cup fresh parsley, chopped
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the diced onion and cook until translucent, about 5 minutes.
- Stir in the garlic and cook for another minute until fragrant.
- Add the sliced mushrooms and cook until they release their juices and become tender, about 8-10 minutes.
- Pour in the vegetable broth, add the cooked wild rice, thyme, salt, and black pepper. Stir well to combine.
- Bring the soup to a boil, then reduce heat and let it simmer for 15 minutes.
- Slowly stir in the heavy cream, and cook for another 5 minutes without boiling.
- Add the baby spinach and let it wilt into the soup.
- Turn off the heat, sprinkle with fresh parsley, and serve hot.
