Creamy Tomato Basil and Orzo Soup - Vegetarian

Ingrédients
- 1 tablespoon olive oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 4 cups vegetable broth
- 1 can (28 oz) crushed tomatoes
- 1/2 cup heavy cream
- 1 cup orzo pasta
- 1/4 cup fresh basil, chopped
- 1 tablespoon balsamic vinegar
- Salt and and pepper to taste
- 1/4 teaspoon red pepper flakes
- 1/4 cup grated Parmesan cheese (optional)
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the diced onion and sauté for 5-7 minutes until translucent.
- Stir in the minced garlic and cook for 1 minute until fragrant.
- Add the vegetable broth and crushed tomatoes to the pot. Bring to a boil.
- Reduce the heat and let simmer for 10 minutes.
- Stir in the heavy cream and orzo pasta. Cook for 9-10 minutes until the orzo is al dente.
- Add the chopped basil, balsamic vinegar, salt, pepper, and red pepper flakes. Cook for another 2 minutes.
- Ladle the soup into bowls and garnish with grated Parmesan cheese if desired.
- Drizzle a small amount of additional balsamic vinegar on top before serving.
