- 1 can (28 oz) crushed tomatoes
- 1/4 cup fresh basil, chopped
- 1 tablespoon balsamic vinegar
- Salt and and pepper to taste
- 1/4 teaspoon red pepper flakes
- 1/4 cup grated Parmesan cheese (optional)
In a large pot, heat the olive oil over medium heat.
Add the diced onion and sauté for 5-7 minutes until translucent.
Stir in the minced garlic and cook for 1 minute until fragrant.
Add the vegetable broth and crushed tomatoes to the pot. Bring to a boil.
Reduce the heat and let simmer for 10 minutes.
Stir in the heavy cream and orzo pasta. Cook for 9-10 minutes until the orzo is al dente.
Add the chopped basil, balsamic vinegar, salt, pepper, and red pepper flakes. Cook for another 2 minutes.
Ladle the soup into bowls and garnish with grated Parmesan cheese if desired.
