Ingrédients
- 4 large bell peppers (any color), sliced
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1/4 cup red wine vinegar
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon fresh oregano, chopped
- 1 tablespoon fresh basil, chopped
- 1 tablespoon fresh parsley, chopped
- 1/4 teaspoon crushed red pepper flakes (optional)
Instructions
- Preheat your grill or broiler to high heat.
- Grill or broil the bell pepper slices until the skin is charred and blistered, about 5-7 minutes.
- Place the charred peppers in a bowl and cover with plastic wrap. Let them steam for about 10 minutes.
- Peel the skins from the peppers and discard the skins.
- In a large bowl, whisk together the olive oil, red wine vinegar, minced garlic, salt, black pepper, and crushed red pepper flakes (if using).
- Add the peppers to the bowl and toss to coat them in the marinade.
- Sprinkle the fresh herbs over the marinated peppers and mix gently to combine.
- Refrigerate for at least 1 hour or overnight for the flavors to meld before serving.
