The Diabetic-Friendly Tiramisu is a delightful twist on the classic Italian dessert, crafted with care to retain its rich, creamy flavors while being mindful of sugar intake. By combining mascarpone cheese with Greek yogurt and using a sugar substitute, this version is just as indulgent, but without the guilt. The layers of coffee-soaked ladyfingers alternate with the smooth, creamy mixture, creating a harmony of textures and flavors.
Ingrédients
- 1 cup strong brewed coffee, cooled
- 2 tablespoons brandy or rum (optional)
- 1 teaspoon pure vanilla extract
- 3/4 cup mascarpone cheese
- 1/2 cup Greek yogurt
- 1/4 cup stevia or other sugar substitute
- 1 teaspoon unsweetened cocoa powder for dusting
- 12 sugar-free ladyfinger cookies
- 2 large eggs, separated
Instructions
- In a shallow dish, combine the brewed coffee, brandy/rum (if using), and vanilla extract. Set aside.
- In a mixing bowl, beat the egg whites until stiff peaks form. Set aside.
- In another bowl, whisk together the mascarpone cheese, Greek yogurt, and stevia until smooth. Add the egg yolks and mix until fully incorporated.
- Gently fold the beaten egg whites into the mascarpone mixture until smooth and creamy.
- Dip each ladyfinger briefly into the coffee mixture, making sure both sides are moistened but not soggy.
- Arrange half of the dipped ladyfingers in a single layer at the bottom of an 8x8 inch dish or similar-sized container.
- Spread half of the mascarpone mixture over the ladyfingers, smoothing the top with a spatula.
- Repeat the layers with the remaining ladyfingers and mascarpone mixture.
- Cover and refrigerate for at least 4 hours, preferably overnight, to allow the flavors to meld and the dessert to set.
- Before serving, dust the top with unsweetened cocoa powder.
