Veggie Pumpkin Spice Energy Bites with Walnuts - Vegetarian
The Autumn Harvest Energy Bites bring the comforting flavors of fall into a portable, nutritious snack. Each bite combines the richness of pumpkin puree with the crunch of chopped walnuts and the warm spices of cinnamon, nutmeg, ginger, and cloves. These no-bake treats are perfect for when you need a quick energy boost, whether it’s between meals or as a post-workout snack.
In a large mixing bowl, combine the rolled oats, pumpkin puree, honey or maple syrup, chopped walnuts, flaxseed meal, ground cinnamon, ground nutmeg, ground ginger, and ground cloves.
Add the dried cranberries, vanilla extract, and almond butter to the mixture. Stir until all ingredients are well combined.
Using your hands, roll the mixture into small, bite-sized balls.
Place the balls on a baking sheet lined with parchment paper.
Refrigerate for at least 30 minutes to allow them to set.
Store in an airtight container in the refrigerator for up to one week.
