- 1 bunch bunch asparagus, trimmed and cut into bite-sized pieces
- 1/2 cup cherry tomatoes, halved
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh basil, chopped
- 1/4 cup fresh mint, chopped
- 1/4 cup crumbled feta cheese
- 2 tablespoons lemon juice
- 1/4 teaspoon black pepper
Rinse the quinoa under cold water. In a medium saucepan, bring the quinoa and water to a boil.
