- 8 tablespoons unsalted butter, cold and cubed
- 2 tablespoons granulated sugar
- 3-5 tablespoons ice-cold water
- 1 large egg, beaten (for egg wash)
- 1 tablespoon raw sugar (for sprinkling)
Preheat your oven to 400°F (200°C).
In a large bowl, mix the flour, salt, and granulated sugar.
Add the cold, cubed butter to the flour mixture. Using a pastry cutter or your fingers, blend until the mixture resembles coarse crumbs.
Gradually add the ice-cold water, one tablespoon at a time, mixing until the dough starts to come together. Do not overwork the dough.
Form the dough into a disk, wrap in plastic, and chill in the refrigerator for 30 minutes.
On a lightly floured surface, roll out the dough to about a 12-inch circle.
Transfer the dough to a parchment-lined baking sheet.
Arrange the halved figs in the center of the dough, leaving a 2-inch border around the edges.
Drizzle the honey over the figs and sprinkle with sliced almonds.
Fold the edges of the dough over the figs, pleating as necessary to form a rustic edge.
Brush the edges of the dough with the beaten egg and sprinkle with raw sugar.
Bake for 35-40 minutes, until the crust is golden brown and the figs are tender and caramelized.
Allow the galette to cool slightly before serving.
