- 4 large portobello mushrooms
- 1 teaspoon balsamic vinegar
- 4 slices provolone cheese
- 1/4 cup red onion, thinly sliced
- Salt and and black pepper to taste
Preheat your grill to medium-high heat.
In a small bowl, mix together olive oil, balsamic vinegar, soy sauce, garlic powder, and onion powder.
Clean the portobello mushrooms and remove the stems. Brush them with the olive oil mixture and season with salt and black pepper.
Place the mushrooms on the grill, gill side up, and cook for about 5-7 minutes on each side, until they are tender and juicy. During the last couple of minutes, place a slice of provolone cheese on each mushroom to let it melt.
While the mushrooms are grilling, lightly toast the buns on the grill.
Assemble the burgers by placing each grilled mushroom on a toasted bun, then adding a slice of tomato, a few leaves of baby spinach, and some red onion slices.
