- 1 cup green lentils, rinsed
- 1 large onion, finely chopped
- 1 can (14.5 oz) diced tomatoes
- 1/4 teaspoon black pepper
- 1 tablespoon red wine vinegar
- 2 tablespoons fresh parsley, chopped
Heat the olive oil in a large pot over medium heat.
Add the onion and garlic, and sauté until softened, about 5 minutes.
