Ingrédients
  

  • 2 cups heavy cream
  • 1 vanilla vanilla bean, split and scraped
  • 1 teaspoon orange blossom water
  • 5 large egg yolks
  • 1/2 cup granulated sugar
  • 1/4 cup superfine sugar (for caramelizing)

Instructions
 

  • Preheat your oven to 325°F (160°C).
  • In a medium saucepan, heat the heavy cream and vanilla bean over medium heat until just simmering.
  • Remove from heat, cover, and let it infuse for 15 minutes. Remove the vanilla bean.
  • In a large bowl, whisk together the egg yolks and granulated sugar until the mixture becomes light.
  • Slowly pour the warm cream mixture into the egg mixture, whisking continuously to avoid cooking the eggs.
  • Stir in the orange blossom water.
  • Pour the mixture into 6 ramekins and place them in a baking dish.
  • Fill the baking dish with hot water halfway up the sides of the ramekins.
  • Bake for 40-45 minutes, until the custards are set but still slightly jiggly in the center.
  • Remove from the oven and let cool in the water bath. Refrigerate for at least 2 hours or overnight.
  • When ready to serve, sprinkle the superfine sugar evenly over the top of each custard and caramelize using a kitchen torch until golden brown.
