- 4 ears ears fresh corn, husked
- 2 cups heirloom cherry tomatoes, halved
- 1/4 cup red onion, finely diced
- 1/4 cup fresh basil, torn
- 1 tablespoon red wine vinegar
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon black pepper
- 1/4 cup feta cheese, crumbled
Preheat your grill to medium-high heat.
Brush the corn cobs lightly with olive oil and place them on the grill.
Grill the corn, turning occasionally, until charred and tender, about 10 minutes.
Remove the corn from the grill and let it cool slightly. Cut the kernels off the cob and place them in a large bowl.
In the same bowl, add the halved cherry tomatoes, red onion, and fresh basil.
In a small bowl, whisk together the remaining olive oil, red wine vinegar, smoked paprika, sea salt, and black pepper.
Pour the dressing over the salad and toss everything together gently to coat.
Sprinkle the crumbled feta cheese over the top and give it a final gentle toss.
Serve immediately or refrigerate for up to 2 hours to let the flavors meld.
