- 1 cup cooked black beans, drained and rinsed
- 2 tablespoons almond butter
- 1/2 cup unsweetened cocoa powder
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- 1/2 cup walnuts, chopped (optional)
Preheat the oven to 350°F (175°C) and grease a mini muffin pan or line it with paper liners.
In a
food processor, blend the black beans and almond butter until smooth.
Add cocoa powder, oat flour, maple syrup, vanilla extract, baking powder, and salt to the bean mixture, and process until completely combined.
Stir in the chopped walnuts if using, then scoop the batter evenly into the prepared muffin pan.
Bake for 15-18 minutes or until the tops are firm and the edges start to pull away from the sides of the pan.
Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
