Vegan Creamy Cauliflower and Kale Soup with Nutritional Yeast - Vegan

Ingrédients
- 1 large cauliflower, chopped
- 2 cups kale, chopped
- 1 large onion, chopped
- 3 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup unsweetened almond milk
- 1/4 cup nutritional yeast
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon turmeric
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the garlic, smoked paprika, and turmeric; cook for another minute.
- Add the chopped cauliflower and vegetable broth. Bring to a boil, then reduce the heat and simmer for 15 minutes or until the cauliflower is tender.
- Remove the pot from heat. Using an immersion blender, blend the soup until smooth.
- Return the pot to the stove and stir in the almond milk, nutritional yeast, chopped kale, salt, and black pepper.
- Simmer for another 5 minutes or until the kale is wilted and the soup is heated through.
- Serve hot and enjoy!
