Ingrédients
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 pound broccoli florets
- 1 pound cauliflower florets
- 4 cups vegetable broth
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon nutmeg
- 2 cups almond milk
- 1 tablespoon nutritional yeast
- 1 tablespoon lemon juice
- 1/4 cup chopped fresh parsley
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the onion and sauté until translucent, about 5 minutes.
- Stir in the garlic and cook for another minute until fragrant.
- Add the broccoli and cauliflower florets to the pot and stir to combine.
- Pour in the vegetable broth and bring the mixture to a boil.
- Reduce the heat and simmer until the vegetables are tender, about 20 minutes.
- Season with salt, black pepper, and nutmeg.
- Return the soup to the pot and stir in the almond milk, nutritional yeast, and lemon juice.
- Heat the soup over low heat until warm, about 5 minutes. Do not bring to a boil.
- Serve hot, garnished with chopped fresh parsley.
