Spicy Sweet Potato and Peanut Soup - Vegan

Ingrédients
- 2 tablespoons olive oil
- 1 large onion, chopped
- 2 medium sweet potatoes, peeled and diced
- 3 cloves garlic, minced
- 1 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon cayenne pepper
- 1/2 cup peanut butter
- 1 can (14 oz) diced tomatoes
- 4 cups vegetable broth
- 1 can (15 oz) coconut milk
- Salt and and pepper to taste
- 1/4 cup chopped fresh cilantro
- 1 lime, lime, juiced
Instructions
- Heat olive oil in a large pot over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
- Add the minced garlic, cumin, smoked paprika, and cayenne pepper. Cook for an additional 1-2 minutes until fragrant.
- Stir in the diced sweet potatoes, peanut butter, diced tomatoes, and vegetable broth. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until the sweet potatoes are tender.
- Stir in the coconut milk, salt, and pepper. Simmer for an additional 10 minutes to allow flavors to meld.
- Remove from heat and stir in the lime juice.
