- 10 cups popcorn, popped
- 1 cup coconut sugar
- 1/4 cup coconut oil
- 1/4 cup maple syrup
- 1 teaspoon vanilla extract
- 1/4 teaspoon sea salt
- 1/4 teaspoon baking soda
Instructions
- Preheat your oven to 250°F (120°C) and line a baking sheet with parchment paper.
- Place the popped popcorn in a large mixing bowl.
- In a medium saucepan over medium heat, combine the coconut sugar, coconut oil, and maple syrup. Stir constantly until the mixture begins to bubble.
- Once the mixture is bubbling, stop stirring and let it cook for 3-4 minutes, allowing it to thicken slightly.
- Remove the saucepan from the heat and stir in the vanilla extract, sea salt, and baking soda. The mixture will bubble up and become frothy.
- Immediately pour the caramel sauce over the popcorn and stir with a spatula until all the popcorn is evenly coated.
- Spread the caramel-coated popcorn onto the prepared baking sheet and bake for 45 minutes, stirring every 15 minutes to ensure even coating.
- Remove from the oven and let it cool completely before breaking it into chunks and serving. Enjoy!
