Coconut Lime Energy Bites - Vegan
The Coconut Lime Energy Bites are a perfect blend of tropical flavors packed into a convenient, bite-sized snack. Combining the refreshing zest of lime with the rich, natural sweetness of dates and the subtle crunch of shredded coconut, these energy bites offer a delightful taste experience.
Ingrédients
- 1 cup shredded coconut, unsweetened
- 1/2 cup almond flour
- 10 medjool medjool dates, pitted and chopped
- 2 tablespoons coconut oil, melted
- 1/4 cup lime juice
- 1 tablespoon lime zest
- 1/4 teaspoon salt
Instructions
- In a food processor, combine the shredded coconut, almond flour, and salt. Pulse until well blended.
- Add the chopped dates, coconut oil, lime juice, and lime zest to the mixture in the food processor. Pulse until the mixture begins to stick together.
- Scoop out a tablespoon of the mixture and form it into a ball using your hands. Repeat with the remaining mixture.
- Place the energy bites on a parchment-lined baking sheet and refrigerate for at least 30 minutes to firm up.
- Store the energy bites in an airtight container in the refrigerator for up to one week.
