Ingrédients
- 1 cup quinoa, rinsed
- 2 cups water
- 1 can black beans, drained and rinsed
- 1 cup cherry tomatoes, halved
- 1/2 cup red bell pepper, diced

- 1 avocado, avocado, diced
- 1/4 cup fresh cilantro, chopped
- 1 tablespoon olive oil
- 1 tablespoon lime juice

Instructions
- In a medium pot, combine quinoa and water and bring to a boil.
- Reduce heat to low, cover, and simmer until the water is absorbed and quinoa is tender, about 15 minutes.
