Instructions

  • In a large bowl, combine the cooled quinoa, cucumber, cherry tomatoes, kalamata olives, red onion, edamame beans, carrot, cilantro, mint, and feta cheese. Toss gently to combine.
  • In a small bowl, whisk together the soy sauce, rice vinegar, olive oil, sesame oil, honey, ground ginger, and minced garlic. Season with salt and pepper to taste.
