Mediterranean Meets Far East Salad - Vegetarian

Ingrédients
- 1 cup quinoa
- 2 cups water
- 1 medium cucumber, diced
- 1 cup cherry tomatoes, halved
- 1/2 cup kalamata olives, pitted and sliced
- 1/4 cup red onion, thinly sliced
- 1/2 cup edamame beans
- 1 medium carrot, julienned
- 1/4 cup fresh cilantro, chopped
- 1/4 cup fresh mint, chopped
- 1/4 cup crumbled feta cheese
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 2 tablespoons olive oil
- 2 teaspoons sesame oil
- 1 teaspoon honey
- 1/2 teaspoon ground ginger
- 1 clove garlic, minced
- Salt and and pepper to taste
Instructions
- Rinse the quinoa under cold water. In a medium saucepan, bring the quinoa and water to a boil. Reduce heat to low, cover, and simmer for about 15 minutes, or until the water is absorbed and the quinoa is tender. Let it cool.
- In a large bowl, combine the cooled quinoa, cucumber, cherry tomatoes, kalamata olives, red onion, edamame beans, carrot, cilantro, mint, and feta cheese. Toss gently to combine.
- In a small bowl, whisk together the soy sauce, rice vinegar, olive oil, sesame oil, honey, ground ginger, and minced garlic. Season with salt and pepper to taste.
- Pour the dressing over the salad and toss to coat evenly. Serve immediately or refrigerate for up to 2 hours to allow the flavors to meld.
