Ingrédients
- 1 cup quinoa
- 2 cups water
- 1 large ripe mango, diced
- 1 large avocado, diced
- 1/2 cup red bell pepper, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- 2 tablespoons olive oil
- 2 tablespoons lime juice
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 12 large lettuce leaves
Instructions
- Rinse the quinoa under cold water. In a medium saucepan, combine the quinoa and water and bring to a boil.
- Reduce the heat to low, cover, and simmer for 15 minutes or until the quinoa is tender and the water is absorbed.
- Remove from heat and let it cool.
- In a large bowl, combine the cooked quinoa, mango, avocado, red bell pepper, red onion, and cilantro.
- In a small bowl, whisk together the olive oil, lime juice, salt, and black pepper.
- Pour the dressing over the salad and toss to combine.
- Spoon the salad mixture into the lettuce leaves, forming small cups.
