Lemon Herb Tofu Salad - Vegan
The Lemon Herb Tofu Salad combines the crispness of fresh mixed greens and vibrant vegetables with the protein-packed delight of marinated, crispy tofu. Ingrédients
- 14 oz tofu, firm
- 2 tablespoons olive oil
- 2 tablespoons fresh lemon juice
- 1 teaspoon lemon zest
- 1 tablespoon fresh parsley, chopped
- 1 tablespoon fresh dill, chopped
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 3 cups mixed greens
- 1 cup cherry tomatoes, halved
- 1/4 cup red onion, thinly sliced
- 1/2 cucumber, cucumber, sliced
- 1/4 cup Kalamata olives, pitted and halved
Instructions
- Press the tofu to remove excess moisture, then cut into cubes.
- In a mixing bowl, whisk together the olive oil, fresh lemon juice, lemon zest, parsley, dill, garlic powder, salt, and black pepper.
- Add the tofu cubes to the bowl and toss to coat. Allow to marinate for at least 20 minutes.
- Heat a large skillet over medium-high heat and add the marinated tofu. Cook until golden and crispy on all sides, about 10-12 minutes.
- In a large salad bowl, combine the mixed greens, cherry tomatoes, red onion, cucumber, and Kalamata olives.
- Add the cooked tofu to the salad and toss gently to mix.
- Serve immediately, garnished with additional fresh herbs if desired.
