Ingrédients
- 1 cup couscous
- 1 1/4 1/4 cups vegetable broth
- 2 tablespoons olive oil
- 1 large zucchini, sliced
- 1 medium eggplant, sliced
- 1 red red bell pepper, cut into strips
- 1 yellow yellow bell pepper, cut into strips
- 1/2 cup cherry tomatoes, halved
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 1/2 cup feta cheese, crumbled
- 1/4 cup lemon juice
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon dried oregano
Instructions
- Preheat your grill to medium-high heat.
- In a medium pot, bring the vegetable broth to a boil. Remove from heat, add the couscous, cover, and let sit for 5 minutes. Fluff with a fork.
- While couscous is resting, toss the zucchini, eggplant, and bell peppers with 1 tablespoon of olive oil, and grill them for 4-5 minutes on each side until tender and slightly charred.
- In a large bowl, combine the grilled vegetables, cherry tomatoes, red onion, and parsley.
- Add the couscous to the bowl with the vegetables, and gently toss to combine.
- In a small bowl, whisk together the remaining olive oil, lemon juice, salt, pepper, and oregano.
- Pour the dressing over the couscous and vegetable mixture and toss until everything is evenly coated.
