Vegetarian Meatballs - Vegetarian
The Savio-Spinach Veggie Meatballs are a delightful blend of flavors and textures, combining the hearty protein of chickpeas with the fresh greenery of finely chopped spinach. Baked to perfection, these meatballs are golden brown on the outside and tender on the inside, making them an ideal main course for a wholesome dinner.
Ingrédients
- 1 cup chickpeas, cooked and mashed
- 1 cup spinach, finely chopped
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1/2 small small onion, finely chopped
- 2 cloves garlic, minced
- 1 large egg
- 1 tablespoon olive oil
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a large bowl, combine mashed chickpeas, chopped spinach, breadcrumbs, Parmesan cheese, onion, and garlic.
- Add the egg, olive oil, dried oregano, salt, and black pepper. Mix until all ingredients are well combined.
- Form the mixture into small balls, about the size of a golf ball, and place them on the prepared baking sheet.
- Bake for 20-25 minutes, or until the outside is golden brown and crispy, flipping halfway through.
- Remove from the oven and let cool slightly before serving.
