The Creamy Cauliflower Mac Delight is a mouth-watering twist on the traditional mac and cheese. This dish masterfully combines tender elbow macaroni with a rich and velvety cheese sauce infused with a hidden layer of steamed cauliflower puree. Ingrédients
- 1 medium head cauliflower, cut into florets
- 8 oz elbow macaroni
- 1 tablespoon olive oil
- 1/4 cup all-purpose flour
- 2 cups milk
- 1 cup cheddar cheese, shredded
- 1/2 cup Parmesan cheese, grated
- 1 teaspoon Dijon mustard
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup breadcrumbs
- 1 tablespoon parsley, chopped
Instructions
- Preheat your oven to 375°F (190°C).
- Cook the macaroni according to package instructions until al dente. Drain and set aside.
- Steam the cauliflower florets until tender, about 8-10 minutes. Drain and blend in a food processor until smooth.
- In a medium saucepan, heat olive oil over medium heat. Add the flour and whisk continuously for about 2 minutes to form a roux.
- Gradually whisk in the milk until smooth. Cook and stir until the mixture thickens and boils.
- Reduce heat to low and stir in the cheddar and Parmesan cheeses until melted and smooth.
- Add the cauliflower puree, Dijon mustard, garlic powder, onion powder, salt, and black pepper. Stir until evenly combined.
- Add the cooked macaroni to the cheese and cauliflower mixture, stirring well to coat evenly.
- Transfer the mixture to a greased baking dish. Sprinkle breadcrumbs evenly over the top.
- Bake in the preheated oven for 20 minutes, or until the top is golden brown and bubbly.
- Garnish with chopped parsley before serving.
