Ingrédients
- 2 large sweet potatoes, peeled and grated
- 1/2 cup all-purpose flour
- 1/4 cup green onions, finely chopped
- 1/2 teaspoon ground cumin
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 egg, egg, beaten
- 2 tablespoons olive oil
- 1 large mango, peeled and diced
- 1/4 red red bell pepper, finely chopped
- 1/4 red red onion, finely chopped
- 1 tablespoon lime juice
- 1 tablespoon fresh cilantro, chopped
- 1/2 teaspoon salt
Instructions
- In a large bowl, combine the grated sweet potatoes, flour, green onions, cumin, salt, black pepper, and beaten egg. Mix thoroughly until well combined.
- Heat the olive oil in a large skillet over medium heat.
- Scoop 1/4 cup of the sweet potato mixture and form it into a patty. Place the patty in the skillet and repeat with the remaining mixture.
- Cook the sweet potato cakes for about 4-5 minutes on each side, or until golden brown and cooked through. Remove from the skillet and place on a paper towel-lined plate to drain excess oil.
- In a small bowl, combine the diced mango, red bell pepper, red onion, lime juice, cilantro, and salt. Mix well to form the salsa.
- Serve the sweet potato cakes warm, topped with the fresh mango salsa.
