Spinach and Cheese Quesadillas - Vegetarian
The Spinach and Cheese Quesadillas offer a perfect blend of crispy tortillas enveloping a luscious, cheesy filling punctuated with the freshness of spinach. Each bite delivers a delightful balance of textures and flavors, making them an ideal choice for a quick, satisfying meal.
Ingrédients
- 2 cups spinach, finely chopped
- 1 cup shredded mozzarella cheese
- 1/2 cup shredded cheddar cheese
- 4 large flour tortillas
- 1 tablespoon olive oil
- 1/4 cup red onion, finely chopped
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder
- 1/4 teaspoon chili flakes (optional)
- 1/2 cup salsa
- 1 avocado, avocado, sliced
- 1/2 cup sour cream
Instructions
- Heat the olive oil in a large skillet over medium heat.
- Add the red onion and sauté until soft, about 3-4 minutes.
- Add the chopped spinach to the skillet and cook until wilted, about 2-3 minutes.
- Season the spinach mixture with black pepper, garlic powder, and chili flakes (if using).
- Remove the spinach from the skillet and set aside.
- In the same skillet, place a tortilla and sprinkle a layer of mozzarella and cheddar cheese evenly over half of the tortilla.
- Spread a spoonful of the spinach mixture over the cheese, then fold the tortilla in half to enclose the filling.
- Cook the quesadilla for 2-3 minutes on each side, or until the cheese is melted and the tortilla is golden brown and crispy.
- Repeat with the remaining tortillas and filling.
- Cut each quesadilla into wedges and serve with salsa, avocado slices, and sour cream.
