Ingrédients
- 2 tablespoons olive oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 tablespoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon ground turmeric
- 1/4 teaspoon cayenne pepper
- 2 cups cooked chickpeas (or 1 can, drained)
- 1 can (14 oz) diced tomatoes
- 1 can (14 oz) coconut milk
- 4 cups fresh spinach
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- Juice of of 1 lemon
- 1/4 cup fresh cilantro, chopped
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the chopped onion and sauté until soft and translucent, about 5 minutes.
- Add the minced garlic and grated ginger, and sauté for another minute until fragrant.
- Stir in the ground cumin, ground coriander, ground turmeric, and cayenne pepper, cooking for an additional minute to toast the spices.
- Add the chickpeas, diced tomatoes, and coconut milk to the pot, stirring to combine.
- Bring the mixture to a simmer and cook for 15-20 minutes, allowing the flavors to meld.
- Add the fresh spinach to the pot and cook for another 5 minutes until wilted.
- Season with salt, black pepper, and lemon juice to taste.
- Stir in chopped fresh cilantro before serving.
