  • Add the chickpeas, diced tomatoes, and coconut milk to the pot, stirring to combine.
  • Bring the mixture to a simmer and cook for 15-20 minutes, allowing the flavors to meld.
  • Add the fresh spinach to the pot and cook for another 5 minutes until wilted.
