Ingrédients
- 1 tablespoon olive oil
- 1 medium red onion, finely chopped
- 2 cloves garlic, minced
- 1/2 cup sun-dried tomatoes, chopped
- 1 cup orzo pasta
- 2 cups vegetable broth
- 1/2 cup Kalamata olives, sliced
- 1 cup cherry tomatoes, halved
- 1 tablespoon capers
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup baby spinach
- 1/2 cup feta cheese, crumbled
- 2 tablespoons fresh parsley, chopped
Instructions
- Heat olive oil in a large pot over medium heat.
- Add the red onion and garlic, and sauté until the onion is translucent, about 3-4 minutes.
- Stir in the sun-dried tomatoes and orzo pasta, cooking for an additional 2 minutes.
- Pour in the vegetable broth and bring to a simmer.
- Add the Kalamata olives, cherry tomatoes, capers, oregano, basil, salt, and black pepper.
- Reduce heat to low and let the mixture simmer, stirring occasionally, until the orzo is tender and the liquid is mostly absorbed, about 10 minutes.
- Stir in the baby spinach and cook until wilted, about 2 minutes.
- Remove from heat and sprinkle with feta cheese and fresh parsley before serving.
