Grilled Vegetable and Hummus Wrap - Vegan

Ingrédients
- 1 medium zucchini, sliced
- 1 red red bell pepper, sliced
- 1 yellow yellow bell pepper, sliced
- 1 red red onion, sliced
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon smoked paprika
- 4 whole whole wheat tortillas
- 1 cup hummus
- 1/4 cup fresh parsley, chopped
- 1 tablespoon lemon juice
Instructions
- Preheat grill to medium-high heat.
- In a large bowl, mix together the zucchini, red bell pepper, yellow bell pepper, and red onion with olive oil, salt, black pepper, and smoked paprika.
- Place the vegetables on the grill and cook for about 5-7 minutes on each side, until they are tender and slightly charred.
- Remove the vegetables from the grill and set aside.
- Warm the whole wheat tortillas on the grill for about 20 seconds on each side, or until soft and pliable.
- Spread 1/4 cup of hummus evenly over each tortilla.
- Divide the grilled vegetables evenly among the tortillas, placing them on top of the hummus.
- Sprinkle fresh parsley and a squeeze of lemon juice over the vegetables.
- Roll up the tortillas tightly and slice in half. Serve immediately.
