Roasted Garlic Hummus - Vegan

Ingrédients
- 1 can chickpeas, drained and rinsed
- 2 large cloves garlic, roasted
- 1/4 cup tahini
- 3 tablespoons lemon juice
- 3 tablespoons olive oil
- 1/2 teaspoon ground cumin
- 1/2 teaspoon salt
- 1/4 teaspoon smoked paprika
- 2 tablespoons water (if needed)
Instructions
- Preheat your oven to 400°F (200°C).
- Place the garlic cloves (unpeeled) in a small piece of aluminum foil, drizzle with a bit of olive oil, and wrap tightly.
- Roast for 20-25 minutes until the garlic is completely soft and golden brown. Allow it to cool, then squeeze out the roasted garlic from the skins.
- In a food processor, combine the chickpeas, roasted garlic, tahini, lemon juice, olive oil, ground cumin, and salt.
- Blend until smooth, adding water a tablespoon at a time if needed to reach your desired consistency.
- Transfer the hummus to a serving bowl, drizzle with additional olive oil, and sprinkle with smoked paprika.
- Serve with pita bread, fresh vegetables, or use as a spread in sandwiches.
