Mint Pea Hummus - Vegan

Ingrédients
- 2 cups fresh or frozen peas, thawed
- 1/2 cup fresh mint leaves
- 1/4 cup tahini
- 2 tablespoons lemon juice
- 1 clove garlic, minced
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon ground cumin
- 1/4 cup water (optional, for consistency)
Instructions
- In a food processor, combine the peas, fresh mint leaves, tahini, lemon juice, and minced garlic.
- Blend until smooth, pausing to scrape down the sides as needed.
- Add the olive oil, salt, black pepper, and ground cumin. Blend again until everything is well combined and the hummus is smooth.
- If the mixture is too thick, add water a tablespoon at a time until the desired consistency is reached.
- Taste and adjust seasonings, if necessary.
- Serve immediately with pita chips, fresh vegetables, or as a spread in sandwiches. Store any leftovers in an airtight container in the refrigerator for up to 3 days.
