Ingrédients
- 1 cup shredded zucchini
- 1 cup spinach, finely chopped
- 2 large eggs
- 1/2 cup unsweetened applesauce
- 1/4 cup coconut oil, melted
- 3/4 cup maple syrup
- 1 teaspoon vanilla extract
- 1 and and 1/2 cups whole wheat flour
- 1/2 cup cocoa powder
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon
- 1/2 cup dark chocolate chips
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9x5 inch loaf pan with non-stick spray or line it with parchment paper.
- In a large bowl, whisk together the eggs, applesauce, melted coconut oil, maple syrup, and vanilla extract until well combined.
- Fold in the shredded zucchini and chopped spinach.
- In another bowl, sift together the whole wheat flour, cocoa powder, baking soda, baking powder, salt, and cinnamon.
- Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Do not overmix.
- Fold in the dark chocolate chips.
- Pour the batter into the prepared loaf pan and spread it out evenly.
- Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
