Ingrédients
- 2 large bananas, mashed
- 1 cup fresh spinach, finely chopped
- 1/2 cup applesauce
- 1/3 cup honey or maple syrup
- 1 large egg
- 1 teaspoon vanilla extract
- 1 and and 1/2 cups whole wheat flour
- 1/2 cup rolled oats
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 3/4 cup chocolate chips
- 1/4 cup milk
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large mixing bowl, combine mashed bananas, finely chopped spinach, applesauce, honey or maple syrup, egg, and vanilla extract. Mix well.
- In a separate bowl, whisk together whole wheat flour, rolled oats, baking powder, baking soda, cinnamon, and salt.
- Gently fold the dry ingredients into the wet ingredients until just combined. Be careful not to over-mix.
- Stir in the chocolate chips and add milk to adjust the batter consistency if needed.
- Spoon the batter evenly into the prepared muffin tin.
- Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
- Allow the muffins to cool in the tin for a few minutes, then transfer to a wire rack to cool completely.
