Ingrédients
- 2 cups coconut milk
- 1 cup raspberries

Instructions
- In a medium bowl, whisk together the coconut milk, chia seeds, maple syrup, and vanilla extract until well combined.
- Let the mixture sit for 10 minutes to allow the chia seeds to swell and the mixture to thicken. Stir occasionally during this time.
- Gently fold the raspberries into the mixture, trying not to crush them too much to keep some whole berries in the popsicles.
- Pour the mixture into popsicle molds, dividing it evenly among the molds.
- Insert popsicle sticks into the molds and freeze for at least 4 hours, or until fully frozen.
- To release the popsicles, run the molds under warm water for a few seconds. Serve immediately.
