Ingrédients
- 1 cup jasmine rice
- 2 cups water
- 1 can coconut milk (13.5 oz)
- 1/4 cup coconut sugar
- 1 teaspoon vanilla extract
- 1 ripe ripe mango, diced
- 1/4 teaspoon ground cardamom
- 1/4 teaspoon salt
- 2 tablespoons shredded coconut (for garnish)
- Fresh mint mint leaves (for garnish)
Instructions
- Rinse the jasmine rice under cold water until the water runs clear.
- In a medium saucepan, combine the rice and water. Bring to a boil, then reduce the heat to low, cover, and simmer for 15 minutes until the rice is cooked and the water is absorbed.
- Add the coconut milk, coconut sugar, vanilla extract, ground cardamom, and salt to the cooked rice. Stir well to combine.
- Continue to cook the mixture over medium-low heat, stirring frequently, for about 15-20 minutes until it thickens to a creamy consistency.
- Remove from heat and let it cool slightly.
- Stir in half of the diced mango into the pudding.
- Spoon the pudding into serving bowls. Top with the remaining diced mango, shredded coconut, and fresh mint leaves.
