Quick Lemon Curd - Vegetarian
The Quick Lemon Curd is a delightful burst of citrus and sweetness, bringing a ray of sunshine to any dish. With its smooth, creamy texture and vibrant yellow hue, this curd is perfect for adding a tangy finish to your favorite desserts or as a delectable spread on toast and scones.
Ingrédients
- 1/2 cup fresh lemon juice
- 1 tablespoon lemon zest
- 1/2 cup sugar
- 2 large eggs
- 1/4 cup unsalted butter, cubed
- 1/8 teaspoon salt
Instructions
- In a medium saucepan, whisk together lemon juice, lemon zest, sugar, and eggs over medium heat.
- Add the cubed butter and salt, and continue to whisk constantly until the mixture thickens and coats the back of a spoon, about 6-8 minutes.
- Remove from heat and strain the curd through a fine sieve into a bowl to remove any lumps.
- Cover the surface of the curd with plastic wrap to prevent a skin from forming.
- Let it cool to room temperature, then refrigerate until ready to use. The curd will thicken as it cools.
