Pistachio Macarons - Gluten Free

Ingrédients
- 1 cup powdered sugar
- 1/2 cup almond flour
- 2 large egg whites
- 1/4 cup granulated sugar
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon cream of tartar
- 1/2 cup unsalted butter, softened
- 1 cup powdered sugar (for filling)
- 2 tablespoons pistachio paste
- 1/2 teaspoon almond extract
- Green food food coloring (optional)
- Chopped pistachios pistachios for garnish (optional)
Instructions
- Preheat the oven to 300°F (150°C). Line two baking sheets with parchment paper.
- Sift together 1 cup powdered sugar and almond flour into a bowl.
- In a separate, clean bowl, whisk the egg whites until foamy. Gradually add granulated sugar and cream of tartar, continuing to whisk until stiff peaks form.
- Fold the dry ingredients into the meringue in three additions, being careful not to deflate the mixture. Add green food coloring if using.
- Transfer the batter to a piping bag fitted with a round tip and pipe small circles onto the prepared baking sheets.
- Tap the baking sheets on the counter to release any air bubbles. Let the macarons sit at room temperature for about 30 minutes to form a skin.
- Bake for 15-18 minutes, or until the macarons are set and dry to the touch. Let cool completely before removing from the parchment paper.
- To make the filling, beat the unsalted butter until fluffy. Gradually add 1 cup powdered sugar, pistachio paste, and almond extract, beating until smooth.
- Pair up the macarons by size, then pipe or spread filling onto one macaron shell and sandwich with the other. Garnish the edges with chopped pistachios if desired.
