Pineapple Basil Granita - Vegan

Ingrédients
- 1 large pineapple, peeled and cored
- 1/4 cup fresh basil leaves
- 1/2 cup sugar
- 1/2 cup water
- 1 tablespoon lemon juice
Instructions
- Cut the pineapple into chunks and place in a blender.
- Add the fresh basil leaves, sugar, water, and lemon juice to the blender.
- Blend until smooth and the sugar is fully dissolved.
- Pour the mixture into a shallow baking dish.
- Place the dish in the freezer for 1 hour.
- After 1 hour, use a fork to scrape the frozen edges into the center of the dish.
- Return to the freezer and repeat scraping every 30 minutes for about 2-3 hours, or until the entire mixture is snowy and crystalline.
- Serve in bowls or glasses, garnished with additional fresh basil leaves if desired.
