Pear Olive Oil Cake - Vegetarian
The Pear Olive Oil Cake is a delightful autumn treat that brings together the sweetness of ripe pears with the rich, subtle flavor of olive oil. Ingrédients
- 2 larges pears, ripe and cored
- 1 1/2 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/2 teaspoon salt
- 2/3 cup granulated sugar
- 1/3 cup olive oil
- 2 larges eggs
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/4 cup plain Greek yogurt
- 1/2 cup chopped walnuts
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9-inch cake pan and line the bottom with parchment paper.
- Peel and chop one pear into small pieces; set aside. Slice the second pear thinly and reserve for topping.
- In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon.
- In a large bowl, beat the sugar and olive oil together until smooth. Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract.
- Add the Greek yogurt to the wet ingredients and mix until combined. Gradually add the dry ingredients, mixing just until blended.
- Fold in the chopped pear and walnuts.
- Pour the batter into the prepared cake pan. Arrange the pear slices in a circular pattern on top of the batter.
- Bake for 40-45 minutes or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
