Peach Basil Hand Pies - Vegetarian

Ingrédients
- 2 cups fresh peaches, diced
- 1 tablespoon honey
- 1 tablespoon fresh basil, chopped
- 1 teaspoon lemon juice
- 1/2 teaspoon vanilla extract
- 1/4 cup granulated sugar
- 2 sheets sheets puff pastry
- 1 large egg
- 1 tablespoon milk
- 1/2 cup powdered sugar
- 1 tablespoon heavy cream
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a bowl, combine diced peaches, honey, chopped basil, lemon juice, vanilla extract, and granulated sugar. Mix well and set aside.
- On a floured surface, roll out the puff pastry sheets. Cut each sheet into 6 equal squares.
- Spoon a generous tablespoon of the peach mixture onto the center of each square.
- Fold the pastry over the filling to form a triangle, pressing the edges to seal them. Use a fork to crimp the edges for a decorative finish.
- In a small bowl, whisk the large egg and milk together to make an egg wash. Brush the tops of each hand pie with the egg wash.
- Place the hand pies on the prepared baking sheet and bake for 20-25 minutes, or until golden brown and puffy.
- While the hand pies are baking, prepare the glaze by mixing the powdered sugar and heavy cream until smooth.
- Once the hand pies are ready, let them cool for 10 minutes before drizzling the glaze over the top.
