- 3 large eggs
- 1 cup extra-virgin olive oil

- 1 tablespoon lemon zest
- 2 teaspoons baking powder

- 1/4 cup milk
- 1 tablespoon fresh thyme leaves, finely chopped

Instructions
- Preheat the oven to 350°F (175°C) and grease a 9-inch round cake pan.
- In a large bowl, whisk the flour, baking powder, and salt together; set aside.
- In another bowl, whisk together the sugar, eggs, and lemon zest until light and fluffy.
- Gradually add olive oil, lemon juice, milk, and vanilla extract, mixing until well combined.
- Add the dry ingredients to the wet ingredients, stirring until just combined. Fold in the fresh thyme leaves.
- Pour the batter into the prepared cake pan and smooth the top.
- Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
- Once the cake is cool, dust with powdered sugar before serving.
