Chocolate Mint Avocado Truffles - Vegan
With each bite of these Chocolate Mint Avocado Truffles, you'll be met with a burst of refreshing mint and rich dark chocolate. Ingrédients
- 1 large ripe avocado
- 1 cup dark chocolate chips
- 2 tablespoons cocoa powder
- 1/2 teaspoon mint extract
- 1/4 teaspoon vanilla extract
- 1/4 cup coconut flour
- Pinch of of salt
- 1/2 cup finely chopped fresh mint leaves (optional for garnish)
Instructions
- Slice the avocado in half, remove the pit, and scoop out the flesh into a bowl. Mash until smooth.
- Melt the dark chocolate chips in a microwave-safe bowl in 30-second intervals, stirring each time until completely melted.
- Combine the melted chocolate with the mashed avocado, mint extract, vanilla extract, coconut flour, and a pinch of salt. Mix until smooth and fully combined.
- Refrigerate the mixture for about 30 minutes, or until firm enough to shape.
- Using a spoon, scoop out small portions of the mixture and roll them into balls. If the mixture is too sticky, slightly wet your hands.
- Roll each truffle in cocoa powder until fully coated.
- Place the truffles on a baking sheet lined with parchment paper and refrigerate for an additional 30 minutes to set.
- Optional: Garnish with finely chopped fresh mint leaves before serving.
