Chocolate Hazelnut Mousse Cake - Vegetarian

Ingrédients
- 200 g dark chocolate
- 100 g hazelnuts, finely ground
- 3 large eggs, separated
- 100 g unsalted butter
- 100 g sugar
- 1 cup heavy cream
- 1 teaspoon vanilla extract
- 2 tablespoons cocoa powder
- 1 tablespoon hazelnut liqueur (optional)
- 1/4 teaspoon salt
Instructions
- Preheat your oven to 180°C (350°F). Grease and line a 9-inch springform pan.
- Melt the dark chocolate and butter together in a heatproof bowl over simmering water, stirring until smooth. Allow to cool slightly.
- In a large bowl, beat the egg yolks with half of the sugar until pale and thick.
- Gradually pour the melted chocolate mixture into the egg yolk mixture, stirring constantly.
- Add the hazelnuts, cocoa powder, vanilla extract, and hazelnut liqueur, and mix until well combined.
- In another bowl, beat the egg whites with the salt until they hold soft peaks. Gradually add the remaining sugar and continue to beat until stiff peaks form.
- Gently fold the egg whites into the chocolate mixture in three parts, until just combined.
- Pour the batter into the prepared pan and smooth the surface.
- Bake for 25-30 minutes, until the cake is set but still slightly soft in the center. Let the cake cool completely in the pan on a wire rack.
- For the mousse, whip the heavy cream to soft peaks and gently fold into the remaining chocolate mixture until evenly blended.
- Once the cake is cool, spread the mousse evenly over the top.
- Chill in the refrigerator for at least 2 hours before serving.
