Chia & Mixed Berry Yogurt Parfait - Vegetarian
Each layer of the Berry Delight Chia Yogurt Parfait is a discovery - from the velvety chia pudding infused with vanilla to the creamy Greek yogurt topped with a colorful medley of fresh berries. Ingrédients
- 2 tablespoons chia seeds
- 1 cup unsweetened almond milk
- 1/2 teaspoon vanilla extract
- 1 cup plain Greek yogurt
- 1/2 cup fresh blueberries
- 1/2 cup fresh raspberries
- 1/4 cup sliced strawberries
- 2 tablespoons almond slivers
- 1 tablespoon honey (optional)
Instructions
- In a bowl, mix the chia seeds, almond milk, and vanilla extract until well combined.
- Let the mixture sit for 10 minutes, then reserve in the refrigerator overnight to allow the chia seeds to expand and create a pudding-like texture.
- The next morning, layer half of the Greek yogurt into two serving glasses.
- Top each with half of the chia pudding.
- Layer the mixed berries over the chia layer.
- Add the remaining yogurt, then top with the remaining berries and sprinkle with almond slivers.
- Drizzle honey over each parfait for a touch of sweetness, if using.
