Ingrédients
- 1 pound puff pastry sheets
- 2 cups mixed fresh berries (strawberries, raspberries, blueberries)
- 1 cup heavy cream
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
- 1/2 cup pastry cream
- 2 tablespoons granulated sugar
- 1/4 cup sliced almonds (optional)
- Mint leaves leaves for garnish
Instructions
- Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Roll out the puff pastry sheets onto the prepared baking sheet. Use a fork to poke holes all over the pastry to prevent it from puffing too much.
- Bake in the preheated oven until golden brown and crisp, about 15 minutes. Remove from oven and let cool completely.
- In a large bowl, whip the heavy cream with powdered sugar and vanilla extract until stiff peaks form.
- In another bowl, mix the pastry cream until smooth.
- Once the puff pastry is cool, cut each sheet into rectangles, approximately 4 inches by 2 inches.
- To assemble, place one piece of pastry on the plate, spread a layer of pastry cream, followed by a layer of berries, and then a dollop of whipped cream.
- Top with another piece of puff pastry and repeat with pastry cream, berries, and whipped cream.
- Finish with a third piece of puff pastry on top. Dust with powdered sugar, sprinkle with sliced almonds, and garnish with mint leaves.
- Serve immediately to enjoy the crisp texture of the pastry with the fresh berries and cream.
