Avocado Lime Cheesecake Bars - Vegetarian
The Avocado Lime Cheesecake Bars combine the creamy richness of avocado with the refreshing zest of lime to create a dessert that’s both indulgent and tangy. With a smooth avocado-infused cheesecake filling set atop a buttery graham cracker crust, these bars offer a perfect blend of flavors and textures in every bite.
Ingrédients
- 1 1/2 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 2 large ripe avocados, peeled and pitted
- 16 oz cream cheese, softened
- 3/4 cup sweetened condensed milk
- 1/2 cup fresh lime juice
- 1 tablespoon lime zest
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
Instructions
- Preheat the oven to 325°F (163°C). Line a 9x9-inch baking pan with parchment paper, leaving an overhang on the sides.
- In a medium bowl, mix the graham cracker crumbs, granulated sugar, and melted butter until well combined. Press the mixture firmly into the bottom of the prepared baking pan to form a crust.
- Bake the crust for 10 minutes, then remove from the oven and let it cool completely.
- In a food processor, combine the avocados, cream cheese, sweetened condensed milk, lime juice, lime zest, vanilla extract, and salt. Blend until smooth and creamy.
- Pour the avocado lime mixture over the cooled crust and spread it out evenly.
- Refrigerate the bars for at least 4 hours or until firm. For best results, refrigerate overnight.
- Once chilled, lift the bars out of the pan using the parchment paper overhang. Cut into squares and serve chilled.
