- 1 cup unsweetened applesauce
- 1/4 cup vegetable oil
- 1/2 cup maple syrup

- 1 cup all-purpose flour
- 1 cup whole wheat flour
- 1 tablespoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 tablespoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon ground ginger
- 1/2 cup almond milk
- 1/2 cup chopped walnuts (optional)
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large mixing bowl, combine the applesauce, vegetable oil, maple syrup, and vanilla extract. Stir until well blended.
- In a separate bowl, whisk together the all-purpose flour, whole wheat flour, baking powder, baking soda, salt, ground cinnamon, ground nutmeg, and ground ginger.
- Gradually add the dry ingredients to the wet ingredients, alternating with the almond milk. Stir until just combined, being careful not to overmix.
- Fold in the chopped walnuts if using.
- Divide the batter evenly among the muffin cups, filling each about three-quarters full.
- Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
- Allow the muffins to cool in the tin for a few minutes before transferring to a wire rack to cool completely.
